|Village planning notes=It seems like that we are after more or less same set up and functioning like at OHM and SHA. We will build two five by ten meter tents and one five by six, which will function as experimental kitchen and workshop venues and around them we spread our village. We need running drinkable water and grey water disposal. Again as at CCC 2019 camp we will have cooling trailer ( 300 x 150 x 180 (lwh)), otherwise no bigger installation at mind at the moment but things are still developing. We will need a decent amount of power, the 32 amp for big village should do, we go for gas as much as possible. There are no plans for loud music, we prefer more quiet area no noisy parties, finishing up time for activities, workshops and tastings, between 22h00 till 23h00, after that some talking. We are not big village by number of "residents" but as we function as one of the food&drink hubs at the camp ground we may have up to 200 people around at the same time on busy times.
Location/Contact
The location of our village has not been set yet so we will have to wait for the info which will be shared here later on.

You can call us on our dect phone, FHB0 (3420).

Goals
Main goal is to meet each other as a group in a real word again after two and half years pause and enjoy it being excellent to each other. We will set up our experimental kitchen and workshop venues with our village spread around. We will run workshops, experimental projects and be functioning again as a food, drink and bio related hub for community. Ending around 1000€ in plus would be nice so we are kind of ready for 37c3.

Guidelines
As already said above, “be excellent to each other” is our motto, lets stick to it! Sensitive behaviour towards follow foodhackers around you is important to us, keeping them safe from your experimental frenzy and give them your ear if needed. It is a long ride through the life, many experiences therefore to gain and "swarms" of mistakes on the way. Keeping in mind that it is the community which matters and you are it's part is important, be happy :-).

Workshops
Organizing, running and being used as a place for food, drink and related "workshops" is probably our main activity and what we share with the community. You are welcome to join either submitted or spontaneous workshops or you can give some, for more information please check this section.

FHB Projects
If you have a special project which you would like to run at/from fhb please let us know! By project we mean something what is happening few to several times during the camp, could be presentations, workshops, tastings, example is for example Probiotic Drinks Everywhere project.

FHB Budget
This project is funded independently, majority of it being donated by fhb "members" or supporters through our Crowdsourcing Campaign. We aim to collect 2000€ before the event starts, the total running budget should be around 4500€, for more info check this section. Please do remember our motto "no one turned away for lack of funds". Donations are much appreciated but voluntary!

The origins of cider are lost in the mists of our ancient history. We know it has been around since Roman times for sure, however it was poiré, fermented alcoholic drink made from pears which they preferred. The are notes over the pre-medieval medieval texts about alcoholic drinks prepared from apples in Iberian peninsula, in Frank Reich made by monks from wild apples and tree saps, developing later on especially in France around 12th and 13th century in to a well organized activity which in it's peak, around 18th and 19th century was over passing production of wine and beer in many regions. So what should we consider cider these days? It is an alcoholic beverage prepared from apple juice (moût) fermented by variety of indigenous yeast (traditional way). There are many different varieties and styles of ciders depending on the region of origin, for example in France we have various regions in Normandie versus the different regions in Bretagne, which differ considerably. The brews are specific depending on blend of different apples or more rare mono varietal ciders, traditionally fermented in oak or chestnut barrels (tonneau) or later on after first world war in the bottle (la prise de mousse naturelle) and we could go on and on. I Algoldor am into the ciders for nearly two decades, it is my favourite alcoholic beverage. I decided to make cider as a profession, moving to cider production region of Normandie in France for five years, where I also got formed as cidrie on the institute le Robillard and I'm going to apply the experience which I gathered so far to make this tasting as good as possible. Please be aware time is limited so is therefore the amount of theory which I can share with you at this occasion. We will talk about history of cidre making, today's situation, it's future and of course we will taste variety of high and also few lower quality products to get the spectrum right. This session will walk you through the basics. You will learn what you should be focusing on when tasting the beverage, what to expect based on what do you read on the label on the bottle - sweetness, bitterness/tardiness, acidity, pasteurization etc. depending on the region et cetera. If you have some special sample to share, your own make or something else please get in touch with me in advance so we can plan for it.

Please note that you are going to drink at least half liter or rather over a liter of 4-6% beverages in an average (plus some specials) so you will feel it. We will have around fifteen basic samples and after that we will go on if we wish (so far we always wished ...). We will have something to eat during the session so that should help, however you are not driving any motorized form of transport afterwards that is for sure. We will document most of the ciders on the table so you will be able to track them down, I will write half of them or so down in advance the rest during or after the event. Still taking notes during the session is recommended. This workshop is based on donation at your will no one turned away for lack of funds creed. However please keep in mind that samples and ingredients for this event will be around 150-200 eu and ending up in a decent plus would not offend me at all because it would help me to cover costs related to my presence at this event. I'll have some extra quantity of my ciders for the ones who are especially devoted, they will be for suggested donation or exchange.
Please have a look and support our crowdsourcing campaign!

FHB Departments
This page is dedicated to Food Hacking Base (fhb) presence at MCH 2022 in Scoutinglandgoed in Zeewolde, 22-26th of July 2022.

FHB Gear, Tools and Ingredients
In this section you can find the info about what the fhb equipment is going to be and importantly also the "wish list" of what we would like to have but we are missing (like a high quality blender).

If you love cheese this event is a must, long story short. This is our cheese tasting paradise, cultivated through event to event, hopefully we will have again "cheese tasting train" taking our samples around, fingers crossed (or rather dipped in lazily running aged camembert :-))!

Each session is open to 25 people max, please do sign in advance, you can just show up before the event but we are very likely going to be full for this one. If you can bring cheese which you made by yourself that would be great! Of course some specific local or extraordinary cheese/s or other related condiments like sun dried tomatoes, good quality olives, mustards, wine all would be appreciated. If you are bringing cheese please do label it well with at least it's name and type of milk used, your nick or name/contact would come handy too. The best would be of course to add short description to our wiki (please check the sample). FHB will be getting some high quality cheeses to offer basic selection with other samples surrounding it plus some basic condiments. Note that due to the interest in previous years we are going to run two sessions, each one lasting for about two hours.

This event is based on donation at your will no one turned away for lack of funds.

So lets meet all together again enjoying these lovely creations! Here you can find cheeses which are going to be present, please do add your ones and keep in mind that good half of the cheeses will be not listed here, they will just appear and they are worth of your attention!
===Goals===

FHB Budget
We aim to collect 2000€ before the event starts, the total running budget should be around 4500€, for more info check this section. If you are into the brewing and you have been fermenting some time this workshop is exactly for you, however if you are a beginner but really interested and it seems like there are some spots left well pop in too. Depending on who turns up preferably it is less a workshop and rather discussion and sharing experience. You should already know a bit what is going on, sugars are being broken down by microbes on different compounds like lactic acid, carbon dioxide, alcohol and so on. We will be doing decent amount of tasting including milk kefir based cultures, water kefir, kombucha but lets hope also for some more exotic ones like shindary - non alcoholic version of magkeolli both made from nuruk)(Japanese versions would be amazake and sake made from ipku/koji Aspergillus oryzae), atole and more, comparing therefore variety of cultures and flavours plus we will be discussing different brewing techniques, issues et cetera. I Algoldor would like to include this time some "fun" hands on activities for you, like opening over-pressured bottles etc. Please note that we will be going not only through non alcoholic drinks but also some alcoholic beverages like magkeolli, cidre and I believe we will have also some fermented snacks.
I (Algoldor) was after organizing event like this for years and it is here! Not sure what would be best way how to take care about it, the core idea is to get home made and commercial chips&crisps of high quality and as many varieties and flavours into one spot at same time and taste them. Below are suggestions how could we do it.

How, ideas:

* two bags of at least 75 g per sample, photo of package taken and necessary info uploaded to identify it later (make sample table with first five provided by fhb)
* keep a track at least a bit on who is bringing what so we don't have some samples like ten times
* limit the amount of samples to 30 or so
* provide five samples as fhb so there is some base of high quality selection

This workshop is dedicated to the traditional Korean 김치 (kimchi) making. You will learn the bases by preparing at least one or two types of kimchies based on wild style fermentation. We will see what type of nice vegetables we will get, if possible we will try to be seasonal.

The preparation of vegetable ferments in Korea, called “kimchies”, is an ancient fermentation skill based on wild fermentation starter (naturally occurring lactic acid producing bacteria among the others) and variety of ingredients added. This workshop is a hands-on experience that reviews the basic history and theory of Korean kimchi making and today's preparation style. You will learn how to make probably radish kimchi, preparing it yourselves. Part of this workshop is of course tasting of kimchi samples so you get idea what should your results taste like. You will be leaving with swing top jar of kimchi and knowledge how to make your own.

This workshop is based on donation at your will no one turned away for lack of funds. The resources gained will be used to cover at least part of the costs of Algoldor's presence at MCH20022. Around 30% of profit will go towards fhb budget.

Do you want to amaze your vegan and vegetarian friends with delicious sausages ready for the grill? This is the right place! This workshop is an introduction to seitan making. It's a hands-on workshop, wash your hands properly and be ready to mix!

Seitan is a meat made from the gluten extracted from flour. THIS IS NOT A WORKSHOP FOR ANYONE WITH A GLUTEN ALLERGY!!!!!!!!!!!!!!!!!!!!!

All flour contains gluten, some types to a higher percentage than others. The traditional method of making seitan involves washing the flour to remove the starch, and turn the resulting blob of gluten into mock meat. In this introduction workshop we will skip the flour-washing step and start with gluten flour, which is just the resulting gluten in a much more practical form. We will make sausages out of the gluten flour and cooked beans, and everyone will be able to customize their flavor with herbs, spices, fruits, etc. Bring your ideas, think of what flavors you would like to (re)-create, and don't be afraid to experiment!

If you have fun and want to learn the traditional method of flour-washing seitan making we might do a follow-up mini-workshop in the following days.

This workshop is donation-based at your will, no one turned away for lack of funds. If you can afford to donate, please do, most people donate during the workshop between €5-15 per person which allow us to keep the FHB going and offer more and more fun activities!

FHB Departments
This page is dedicated to Food Hacking Base (fhb) presence at MCH 2022 in Scoutinglandgoed in Zeewolde, 22-26th of July 2022.

FHB Gear, Tools and Ingredients
In this section you can find the info about what the fhb equipment is going to be and importantly also the "wish list" of what we would like to have but we are missing (like a high quality blender).
Please have a look and support our crowdsourcing campaign!

FHB Departments
This page is dedicated to Food Hacking Base (fhb) presence at MCH 2022 in Scoutinglandgoed in Zeewolde, 22-26th of July 2022.

FHB Gear, Tools and Ingredients
In this section you can find the info about what the fhb equipment is going to be and importantly also the "wish list" of what we would like to have but we are missing (like a high quality blender).
